INSTRUCTIONS
- Add some extra virgin olive oil to your pan and heat up slowly.
- Add the spinach and saute till wilted; this should only take about 30 seconds.
- Remove from pan and put aside on your plate.
- Add some more olive oil, heat to a mild temp and carefully add the eggs to your pan.
- The minimum amount of time to cook is when the egg white has changed in colour from opaque to white.
- You may then cook your eggs to adjust to whatever yolk consistency you like.
- Remove from pan and add to your plate.
- Slice up some avocado onto your plate next to your eggs.
Seasoning for flavour
- Add some Celtic salt and black pepper to your eggs
- Drizzle some extra virgin olive oil on your spinach
- Squeeze a lemon and add the juice over the avocado and spinach.
- Sprinkle some Oregano flakes over the entire meal
