INSTRUCTIONS

  1. Add some extra virgin olive oil to your pan and heat up slowly.
  2. Add spinach and saute till wilted; this should only take about 30 seconds.
  3. Remove from pan and put aside on your plate.
  4. Dice up some avocado and set aside.
  5. Place the eggs in a bowl, add a splash of water, and beat until a frothy mix is made.
  6. Add some more oil to your pan and set it to a low temperature.
  7. Place the egg mixture into the pan, and wait till you start to see bubbles forming through the mix.
  8. Lift a portion of the cooked egg mix, allowing some of the uncooked egg to run into the underside of the raised egg.
  9. Once all of the egg bottom looks cooked, flip the egg over.
  10. Now add the cooked spinach and diced avocado over half of the egg.
  11. Once cooked to your desired consistency, fold the plain egg side over to the avocado and spinach side.
  12. Carefully remove from pan and serve.

Seasoning for flavour

  • Add some Celtic salt and black pepper to your omelette
  • Add some fresh parsley to your omelette when flippingĀ 
  • Sprinkle some paprika over the omelette
