Poached Eggs

INGREDIENTS

Eggs

Spinach

Avocado

Olive oil

INSTRUCTIONS

  1. Mash the avocado with olive oil and some lemon juice 

  2. Dice up the spinach and lightly saute 

  3. Spread the avocado along your plate, and then sprinkle your spinach over the top

  4. Sprinkle some sweet paprika for some added flavour 

  5. Add approximately 5- 10 cm of water to your pan. 

  6. Add a tablespoon of apple cider vinegar or white wine vinegar.  

  7. Bring your water to a light simmer. 

  8. Crack your egg and slide it carefully into a cup.

  9. Slowly add the egg to the water.

  10. Cook the egg for two or three minutes until the white is solid.

  11. You may use a spoon to move water over the egg to seal it while keeping the yolk runny.

  12. Carefully remove the egg from the pan using a slotted spatula or similar.

  13. Place on your plate and drizzle some extra virgin olive oil over the egg.

Seasoning for flavour

  • Add Celtic salt and pepper to suit your palate
  • Dice up some chives and sprinkle them over your eggs
  • Sweet Paprika for extra flavour
