Eggs
Spinach
Avocado

INSTRUCTIONS
- Mash the avocado with olive oil and some lemon juice
- Dice up the spinach and lightly saute
- Spread the avocado along your plate, and then sprinkle your spinach over the top
- Sprinkle some sweet paprika for some added flavour
- Add approximately 5- 10 cm of water to your pan.
- Add a tablespoon of apple cider vinegar or white wine vinegar.
- Bring your water to a light simmer.
- Crack your egg and slide it carefully into a cup.
- Slowly add the egg to the water.
- Cook the egg for two or three minutes until the white is solid.
- You may use a spoon to move water over the egg to seal it while keeping the yolk runny.
- Carefully remove the egg from the pan using a slotted spatula or similar.
- Place on your plate and drizzle some extra virgin olive oil over the egg.
Seasoning for flavour
- Add Celtic salt and pepper to suit your palate
- Dice up some chives and sprinkle them over your eggs
- Sweet Paprika for extra flavour
