Sauces, Rubs and Condiments

TOMATO SAUCE

INGREDIENTS

Tomatoes 400 grams 

INSTRUCTIONS

  1. Get some fresh tomatoes and dice them up. (N90 prefers organic tomatoes as they are higher in lycopene, vitamin C, phenols and flavonoids than regular tomatoes)
  2. Put them into a pot and add half a glass of water.
  3. Simmer on low until they are cooked through.
  4. Use a slotted scapula to remove all the solid parts of the tomatoes.
  5. Blend until it forms a smooth paste 
  6. Let cool, and add to your container. 
  7. Freeze or refrigerate

Note that the sauce has no preservatives, and it will only last for a short time compared to commercial brands.

ADDITIONAL FLAVOURING

You can cook some garlic with the tomatoes for some extra tang.

The addition of fresh parsley may give your sauce an authentic flavour.


VINAIGRETTE 

INGREDIENTS

Extra virgin olive oil 200 ml

Apple cider vinegar ( with Mother ) 100 ml 

Dijon mustard teaspoon

INSTRUCTIONS

  1. Add the extra virgin olive oil to the apple cider vinegar and one tablespoon of Dijon mustard to a sealed jar.
  2. Shake vigorously until the mixture has blended all the way through.

ADDITIONAL FLAVOURING

You can add a small pinch of Celtic salt to the mix.

You may also add a teaspoon of organic honey for some extra tang.


SPINACH PESTO

(not to be consumed if you have a nut or seed allergy)

INGREDIENTS

Fresh spinach 400 grams

Extra virgin olive oil 200 ml 

Roasted pesto nuts or sunflower seeds 100 gram

INSTRUCTIONS

Add all ingredients into a blender and mix away

ADDITIONAL FLAVOURING

You can add a small pinch of Celtic salt to the mix.


RUBS AND SPICES

N90’s primary to-go-to list for spices are 

  • Salt
  • Pepper ( any type)
  • Oregano 
  • Parsley 
  • Basil
  • Dill
  • Mint
  • Thyme 
  • Rosemary leaves
  • Paprika 
  • Cinnamon

N90’s favourite rub is a smokey-flavoured one

Mix Celtic salt, cayenne pepper, paprika and a smoke-flavoured spice (that is low in sodium) 

Rub this over animal meat products, let it sit overnight to absorb all the flavouring, and then cook as desired.
